90L 2気圧大型圧力寸胴なべ

従来の圧力寸胴鍋では１日に10時間以上スープをかき混ぜながら火をつけてスープを煮込んでいました。 しかし、この圧力寸胴なら一度圧力をかけてしまえば、どなたでも旨味の凝縮されたスープが作れます！ 更に、調理時間は通常の寸胴と比べて約1/4の時間（※1）で調理ができるため、営業中にスープを炊く場合でも作業に気を取られず営業に専念することができます！ ※1 通常の寸胴でのスープ炊き込み時間を15時間で計算しております。

鍋が沸騰して圧力がかかるまでは強火ですが、圧力がかかってからは、弱火で調理するため 調理時間は約1/4の時間で済み、ガス代も安くなります。 また、作業にかかる人件費・エアコンなどの電気代も削減できるため、 あらゆる点でコスト削減につながります。

例えば1時間圧力をかけるだけで、通常の寸胴で10時間以上炊いたスープより濃度を抽出可能!(当社調べ) 圧力寸胴に入れたガラ用の骨も細かくすることができます。骨も軽くつつくだけで粉々に砕けるので 通常の生ごみとして廃棄が可能です。 スープは専用ホースで別の寸胴に移すことができるので手間いらずです！ 出来上がったスープは何時間もかき混ぜたように乳化※2させることができます。 ※2 液送によって清湯・白湯に分けることができるため、乳化させないあっさりしたスープにも対応可能です。

煮込みやフォンドボーなど圧力鍋のレシピを短時間で大量に短時間で作れるのが導入して一番良かったことです。 数台で同時に作っていましたが一台でまかなえるようになったのでスペースも見直せました。 （神奈川県 社員食堂 責任者様）

確かに体験企画に参加されたお客さまから普通の寸胴で炊いたスープと同じ味にならない点をご指摘いただいております。 普通の寸胴は12時間も炊き上げるので、旨味成分の中でも熱に弱いグルタミン酸を壊してしまいますが、うま味は種類を増やして同時に味わうことでよりうま味を強く感じられるうま味の相乗効果があり、１＋１＝２ではなく１＋１が５になるようにグルタミン酸とイノシン酸を同時にとると５倍強くうま味を感じるといわれます。 濃厚なうま味は短時間で炊き上げることであがります。

このため普通の寸胴で炊いたスープよりもむしろ美味しいとの感想も多数頂いております。 中には1ヶ月かけてお客様の反応を確認しながら普通の寸胴で炊いたスープに対する圧力寸胴で炊いたスープの混合比率を高めてゆき、圧力寸胴に完全移行されたお客様もおられます。 また全く同じ味ではございませんが、できるだけ普通の寸胴で炊いたスープに近い味になるように圧力寸胴を運用するノウハウをご提供します。

確かにご指摘の通り圧力寸胴は全体で55kgと普通の寸胴（約10kg）に比べると非常に重いです。 ただしフタや内鍋などを外して分解していただきますと、本体の寸胴部分は約20kgまで軽くなります。 一人で約15分から20分程度で洗うことができます。
